What sort of magical secret ingredient is used to stop soft scoop ice cream from becoming hard?

i have been enjoying the odd bowl or seven of soft scoop ice cream these past couple of days but instead of really enjoying it,i have been trying to work out what the piece of genius trickery is that makes soft scoop ice cream so easy to dig out of the tub with the spoonWhat sort of magical secret ingredient is used to stop soft scoop ice cream from becoming hard?

Soft-serve ice cream is kept soft by churning and is only chilled to about 15-20 degrees Fahrenheit; your freezer is set to about zero. I believe that modern dispensers keep the mixture at just above the freezing point and freeze it while it is in motion as it's being dispensed.

This is just a guess but I think it has to do with the fat content. If I'm wrong pass it on anyway and we can start an urban legend together! :-)
