I have no idea where you are from mate, but unless you are from hokkaido or at least Japan you will not be able to get the same brand of milk that they use there. After speaking to a few japanese friends I was informed that the dairy products from hokkaido are renowned for their flavour, creaminess, quality and freshness. The ice cream itself looks like a gelato as opposed to a traditional ice cream. This means that it is made with milk not cream. Giving a much lighter softer texture.

I would suggest that you start with a high quality, preferably organic milk high in natural cream, and search the net for some good quality italian gelato recipes. Using a commercial ice cream churner is a must as well.

If you do this I am sure your results will be as good if not better than anything you tasted in Japan.

Good luck
